SASA Wine Steward COURSE Level 1 presented by the Sommeliers Academy

This course is designed to prepare students to sit the official SASA Wine Steward EXAMINATION Level 1 and serves as a baseline for the level of proficiency required by an individual in the role of Wine Steward according to accepted international standards.
The Wine Steward Exam is the first step towards becoming a SASA Accredited sommeleir.
The course consists of two days practical training, hosted by the Sommeliers Academy, followed a an one day exam, hosted by the South African Sommelier Association.
Previous knowledge required
Wine & Spirits Education Trust Level 2 or equivalent wine knowledge with a good knowledge of foreign wines.
Applicant should ideally also have at least two years hospitality experience, preferably in a beverage service related role.
Introduction, purpose of the course, history, purpose and career path of a sommelier.
Service preparations, Setup for service, glassware, stock.
Wine service, tray service, bottle service, presentation, equipment, wine list, serving order.
Customer service, service etiquette, recommendations, dealing with complaints, linguistics.
Product training, faults, food and beverage in combination
After two days of intense training the candidate will have a opportunity to practice his or her skills on their own time before returning to sit the exam hosted by SASA
SASA is a full member of the Association de la Sommellerie Internationale, the largest sommelier association in the world, which makes the accreditation internationally recognized.
The examination is two fold:
A theory examination with multiple choice questions covering basic wine knowledge to the level of previous knowledge required, as stated previously and not covered in this course. As well as wine service related questions which will be covered in the course.
This will be followed by a practical exam, set in a dining room environment, covering all aspects of basic wine service as taught in the course
Pass rate is 60%.
Costs include all lectures and course material, lunch on both days and the fee for the SASA examination.
